Chocolate, we love it! So we work with premium, fine flavor Criollo-Trinitario beans. Our beans come from small farmers in Latin America. People we know, people we trust.

 

After harvest, our beans are fermented for five to seven days. Then comes the sun, which dries them before they are ‘slow-roasted’ at low temperatures. This way the unique characteristics of the Criollo-Trinitario come out and play with your senses. The flavor is intense, pure but not bitter, round and full of aromas. 

 

The beans, or nibs as they are also called, are then shipped to The Netherlands. Here we slowly mill them in shops and in our chocolate labs in the cities of Amersfoort and Leiden. We now have fresh-milled 100% cacao-paste, something divine that true chocolaties can taste on the spot.

 

For sweetness, raw cane sugar is added. And that’s it. No additives like artificial flavors, milk or other fats, soy lecithin or preservatives go in. No cacao butter comes out. Zoen fresh-milled Chocolate is pure and rare: it’s the real thing!

 

Sixty-six and seventy-nine are our magic numbers. These are the cacao percentages we use to make chocolate varieties like ‘Nutty Cranberries’, ‘Seasalty Lavendel’ and ‘Nib ’n Coffee’. A very recent trend is that – besides our 66% and 79% creations - the 100% pure chocolate ‘bars’ are becoming more and more popular.  And then there is the icing on the cake: our custom designs where you decide what your chocolate tastes like!
